The unexpected delicious soup - Today one of my best friends came to visit me in my hometown Groningen. For everyone it's really far away, 3 hours from Rotterdam for her.. so I wanted to make a delicious lunch when she would arrive. I was planning to make a squash soup, but my squash was not as good looking as I thought it was ;-) So I quickly opened the fridge and looked what was left, the result? A wonderful broccoli-parsnip soup was invented!
Ingredients
1 head of broccoli in chunks (keep the heads separate)
2 small parsnips in chunks
1 big white onion
2 cloves of garlic
a bit of oil for frying
1 liter vegetable stock
salt & pepper to taste

Heat up a pan with some oil and fry the chopped onion until translucent. Add the garlic, parsnip, the broccoli stalk and the thyme. Fry until a bit browned and then it's time to add the stock. Wait until the soup starts to boil and cook until the vegetables are a bit softened. Than add the rest of the broccoli. Bring to the boil again and cook for about 10-15 more minutes. Carefully transfer to a blender and blitz until smooth. Season with salt and pepper and serve.
